I set out to make guacamole. I ended up making Salsa-mole. I had two avocados, so that was the base, obviously. And, I had a jalapeno and a roma tomato. A bit of red onion and a pinch of cilantro completed the guacamole. I’m usually a guacamole purist, but Oh. My. Goodness. This is delicious! And beautiful!
Time – ten minutes
Difficulty – easy
- 2 ripe avocados
- 1 jalapeno
- 1 roma tomato
- 1/4 cup minced red onion
- 2 tablespoons minced fresh cilantro
- juice of 1 lemon
- Slice the avocado in half, and then remove from the skin. Mash in a bowl, and set aside.
- Dice the jalapeno and the tomato, then add the minced onion, cilantro, and lemon. Mix, serve, and enjoy!
