Mashed Cauli-tatoes

Cauliflower is definitely having a moment right now. And why not? Gone is the limp, bland steamed vegetable of years ago. Here to stay is cauliflower in everything. Pizza crust, vegan buffalo wings, and these. They are just like mashed potatoes, only more fiber and less calories. Seriously, if you didn’t know that this wasn’t potato, you wouldn’t really notice. If you do know, you can tell, but you don’t miss the potato.



Also, it takes like 10 minutes to make, which is likely less than it would take to make mashed potatoes. So, here’s the tally. Less time, less calories, same(ish) taste. What’s not to like?


  • 1 head cauliflower
  • 1/3 cup cream cheese
  • 1/4 sour cream
  • Salt and pepper to taste
  • Butter to taste/garnish


  1. Boil the cauliflower. Break up the cauliflower into florets. Bring 3-4 cups of water to boil in a pot. Put the cauliflower in, and boil until soft. Drain.
  2. Process. In a food processor, whirl the cauliflower, cream cheese, and sour cream until mixed. Add salt and pepper to taste, and garnish with butter. Serve, and enjoy!
