Since I’ve been back from Europe and in quarantine, I have had the most intense cravings for brownies. I think it started because I just wanted something sweet, and we happened to have all of the ingredients on hand. In the past month or so, I have made this recipe upwards of 20 times. There is just something about brownies that throws me back to my childhood Saturday afternoons with my friends who lived down the street.


Back then, we would use brownie mix. I have spoken before here about my mixed feelings towards mixes. I used to be completely against them. Now, I think they have their place. Brownies, though? Nah. Go for a batch from scratch. This recipe may take some elbow grease, but it makes it more fudgy and moist. But it doesn’t take a lot of time. Just think. In 30 minutes, you could be tucking into these delicious brownies.


Time: 20 minutes

Difficulty: Medium


  • 1 stick butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • Toppings: Sea salt, walnuts, pecans, sprinkles, whatever you want!


  1. Preheat the oven to 350 degrees. Melt the butter in a heatproof bowl. Add the sugar. Using a whisk, beat until lighter in color, about 2 minutes. Add the eggs. Beat for 3 more minutes, until lighter in color. Your goal should be to reach the ribbon stage, or until a figure-8 drawn by dripping the mixture onto the top lasts for a second or so.
  2. Gently fold in the flour and cocoa powder. Using a spatula, reach the bottom of the bowl and fold the mixture over. Be gentle here, for two reasons. One, you just beat a lot of air into the batter. You don’t want to lose that. Two, you don’t want to develop the gluten in the flour. Gluten is a protein that helps give bread it’s chewiness. Here, however, we don’t want chewy or tough. So be gentle, and fold only until just combined.
  3. Pour the batter into a greased or lined pan. Top with chosen toppings. Bake for 23 minutes, or until a knife inserted in the middle has crumbs on it. Err on the side of underbaked. The brownies will continue to cook as they cool and if they don’t, you can always stick them back in the oven to finish. Serve and enjoy!
